Our cooking philosophy
Simple but at the same time innovative, we like to make the most of the land through the search for excellent raw materials.
Our vegetable garden and our passion for this land allow us every day to create quality dishes while respecting the environment.
Ours is a sustainable cuisine, we like to play with all the parts of a product, using all the waste, in this way we try to cut down on waste, enhancing the taste of the raw material and the final dish to the maximum.
The restaurant
Nestled in the Umbrian hills within our resort, a perfect combination of relaxation and nature where time sometimes seems to stand still to let us experience the energy and beauty of this beautiful area.
Always beautiful in winter and summer when the days seem to stand still under the sun and silence becomes master.

EARTH menu, a vegetarian route where we want to make the most of our vegetable garden through cooking and processing techniques.
BEGINNING menu, an 8-course meal representing our chef’s idea of cooking,
We do not indicate the types of dishes present as it varies every 20 days, we ask our customers to trust us and take this little journey into our world.

Collaboration with local companies allows us to enhance and keep tradition alive.
Policy
The restaurant will be closed on Monday and Tuesday evenings. This might vary during the summer (the restaurant might be open).
Being a local cuisine, there may be game dishes.
If this is not welcome, we kindly ask you to let us know.
When booking, we ask you to inform us of any allergies and intolerances.
It is possible to cancel your reservation at no additional cost up to 24 hours before the booked time. If you cancel your reservation after the 24-hour deadline or in the event of a no-show, the restaurant reserves the right to charge the amount of €50 per person to your card.
We also remind you that the type of menu must be chosen for the whole table.
